Cellulase - Cranberry ProcessingBiosun’s Cellulase enzymes are GRAS approved formulations with the main function of breaking down cellulose, a polymer of β-1, 4-linked glucose molecules, which is a common component of plant cell walls. Cellulases can be either endo or exo cellulases. Unlike starch, cellulose comes in several chemical forms and requires a larger number of enzymes to break it down to glucose.
