Lipase - DairyBiosun’s Lipase enzymes are GRAS approved formulations with the main function of attacking a triacylglycerol and remove the fatty acids from the glycerol backbone. The result of enzymatic hydrolysis of a triacylglycerol by lipase is two free fatty acids and a monoglyceride. Lipase is a normal component present in many foods.
In many cases lipase enzymes are used to affect the flavor characteristics of foods. It is commonly applied to create a characteristic flavor in dairy-based products, especially in cheeses.
