Pectinase
Biosun’s Pectinase enzymes are GRAS approved formulations with the main function of degrade pectin substance, a group of colloidal carbohydrates that are constituents of plant cell walls and intercellular layers, which contribute to the texture of many fruits and vegetables. The pectin substances are polymers composed of three monosaccharides: D-galacturonic, D-galactose, and L-arabinose. In citrus fruits, they are mostly found throughout the peel and the membranes.
Our custom blended enzymes have the ability to alleviate problems associated with the processing of fruit juices. They are recommended for viscosity reduction, extraction, mash and juice treatment, clarification, and total depectinization.
