Protease
Biosun’s Protease enzymes are GRAS approved formulations with the main function of hydrolyze proteins. These proteases have a level of specificity that depends on which kind of linkages between the individual glucose units they can hydrolyze.
Like other enzymes that act on polymers, there are endo- and exoproteases. Endoproteases hydrolyze peptide bonds anywhere along the protein chain. The exoproteases attack the ends of the protein chain and remove one amino acid at a time.
