Carotene is an orange pigment important for photosynthesis and responsible for the color exhibited in carrots and many other fruits and vegetables. Beta Carotene (Β-Carotene) is one of the best known carotenoids which can be found in edible vegetables. Carotene provides nutritional benefits as a source of vitamin A. Evidence points Β-carotene as an effective source against three major health problems: cancer, coronary artery diseases, and macular degeneration of the eye. Even though, health benefits are present, this colorant is used in food preparations to optimizing color properties.
Β-Carotene is stable to heat, pH, and sulphur dioxide. This colorant is available in powder and liquid form and its solubility properties are oil-soluble and water dispersible.
Β-Carotene can be used in a variety of food preparation such as margarines, sauces, salad dressings, baked goods and other products where a yellow to orange hue is required.
